From Soave to the Lessinia valleys, across vineyards, castles, olive groves, pastures and gastronomic specialties

About a half-hour drive from Verona, amid rolling hills and well-tended vineyards, we arrive at the medieval village of Soave, nestled beneath the watchful gaze of its crenellated walls and the imposing Scaliger Castle, whose courtyards and fascinating interiors we will explore.

A short distance from the village, we’ll have the opportunity to stop at a local prosciutto producer, where we’ll sample a selection of traditional products, including Crudo di Soave, speck, pancetta, and lard. ​

We’ll then head to a family-run winery, where we’ll enjoy a generous tasting of DOC white wines, particularly the fresh and mineral-rich Soave Classico, its more structured variant, the Superiore, and the sweet Recioto di Soave, produced using the appassimento technique.

The road continues north into the beautiful Illasi Valley, where the vineyards gradually give way to olive groves: optionally, we can stop at a family-run olive oil mill for a tasting of the region’s finest extra virgin olive oils.

 

We’ll then climb up to the pastures of the Lessinia Plateau, where we can stop in one of the small stone villages once inhabited by Cimbrian shepherds and sample cheeses typical of this corner of Veneto - far from the cities and still steeped in a rural culture that has shaped this highly prized territory for centuries. ​
